Ingredients
- Wild chanterelle mushrooms, cleaned and sliced - 1lb
- Chicken of the woods mushrooms, cleaned and sliced - 1lb
- onion, chopped - 1 large
- Garlic, minced - 3 cloves
- Butter - 2 tablespoons
- Olive oil - 2 tablespoons
- Vegetable broth - 6 cups
- Heavy cream - 1 cup
- Salt and pepper to taste
Directions
- Heat butter and olive oil in a large pot over medium-high heat. Add onions and cook until softened. Add garlic and cook for an additional minute.
- Add the chanterelle and chicken of the woods mushrooms to the pot. Cook until browned and softened.
- heat and simmer for 20-25 minutes, or until the mushrooms are tender.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper to taste. Heat through for a few minutes.
