Fresh Spruce Tips

 Spruce tips are young shoots that grow in Spruce trees of the genus Picea! They have a distinct flavour of pine and citrus and grow from early Spring to June.

Fresh spruce tips have a bitter rosemary lemon-like flavour that works well in both savoury and sweet dishes; and cuts through oily and fatty flavours. Loaded with vitamin C, First Nations have long used them for teas. Their bright flavour matches a fresh, bright green colour, which can excite many dishes. Delicious teas, salads, and soups are also popularly used in brewing alcohol.
