The famous Matsutake Gohan (Wild Pine Mushroom Fried Rice) is an aromatic Japanese mixed rice dish cooked with "dashi stock" and matsutake mushroom.
Ingredients
-
1 cup cooked rice
-
8 ounces fresh matsutake mushrooms, sliced
-
2 eggs, beaten
-
1 tablespoon soy sauce
-
1 teaspoon sesame oil
-
1/2 teaspoon garlic powder
-
1/4 teaspoon ginger powder
-
Salt and pepper to taste
-
Green onions, chopped, for garnish
Directions
Prep mushrooms:
Clean the matsutake mushrooms with a soft brush to remove any dirt or debris. Slice them into thin slices. (5 minutes)
Cook mushrooms:
Heat a large skillet over medium-high heat. Add the sliced matsutake mushrooms and cook until browned and fragrant, about 3-5 minutes. Remove from the skillet and set aside. (5 minutes)
Cook rice:
In the same skillet, add the cooked rice and break it up with a spatula. Cook for a few minutes until heated through. (3-5 minutes)
Make omelette:
Pour the beaten eggs into the skillet with the rice. Scramble the eggs until they are set. (3-5 minutes)
Combine ingredients:
Add the cooked matsutake mushrooms, soy sauce, sesame oil, garlic powder, ginger powder, salt, and pepper to the skillet. Stir to combine. (2-3 minutes)
Serve:
Garnish with chopped green onions and serve immediately. (1 minute)
Recipe Note
Note: Matsutake mushrooms have a strong, earthy flavor, so a little goes a long way. Adjust the amount to your preference.
For a more indulgent dish: Consider adding a dollop of miso paste or a drizzle of truffle oil.
