Ingredients

Wild chanterelle mushrooms, cleaned and sliced - 1lb

Chicken of the woods mushrooms, cleaned and sliced - 1lb

onion, chopped - 1 large

Garlic, minced - 3 cloves

Butter - 2 tablespoons

Olive oil - 2 tablespoons

Vegetable broth - 6 cups

Heavy cream - 1 cup

Salt and pepper to taste
Directions
Sauté Mushrooms:
Heat butter and olive oil in a large pot over medium-high heat. Add onions and cook until softened. Add garlic and cook for an additional minute.
Add Mushrooms:
Add the chanterelle and chicken of the woods mushrooms to the pot. Cook until browned and softened.
Add Broth:
heat and simmer for 20-25 minutes, or until the mushrooms are tender.
Puree:
Using an immersion blender or a regular blender, puree the soup until smooth.
Add Cream:
Stir in the heavy cream and season with salt and pepper to taste. Heat through for a few minutes.
Serve:
