Ingredients

Wild lobster mushrooms, cleaned and sliced - 1lb

Butter - 2 tablespoons

Garlic - 1 clove

Mayonnaise - 2 tablespoons

Arugula or other leafy greens - ¼ cup

Sliced Cheese (optional) - ¼ cup

Grated Parmesan Cheese - ¼ cup

Salt and pepper to taste
Directions
Clean and slice mushrooms:
Wash the lobster mushrooms under cold water and remove any dirt or debris. Slice them into desired thickness. (15 minutes)
Sauté the mushrooms:
In a large skillet over medium heat, melt the butter. Add the sliced lobster mushrooms and cook, stirring occasionally, until the mushrooms are tender and browned. This may take 25-30 minutes. Stir in the minced garlic and cook for an additional 30 seconds, or until fragrant. Season with salt and pepper to taste. (25-30 minutes)
Assemble the sandwiches:
Spread mayonnaise on both sides of each bread slice. Place a layer of sautéed mushrooms on one slice of bread. Top with arugula, cheese (if using), and salt and pepper to taste. Sprinkle grated Parmesan cheese on top. (5 minutes)
Close and serve:
Place the other slice of bread on top and cut the sandwich in half diagonally. Serve immediately. (2 minutes)
