1 onion, chopped
-
2 cloves garlic, minced
-
1 teaspoon chili powder
-
1/2 teaspoon cumin
-
1/4 teaspoon salt
-
1/4 teaspoon black pepper
-
1 cup vegetable broth
-
8 corn tortillas

Directions
Prepare the mushrooms:
Heat the olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook until browned and slightly crispy, about 5-7 minutes.
Sauté aromatics:
Add the onion and garlic to the skillet and cook until softened, about 3-5 minutes.
Add seasonings and broth:
Stir in the chili powder, cumin, salt, and pepper. Pour in the vegetable broth and bring to a simmer.
Simmer:
Reduce heat to low and let the mixture simmer until the broth has evaporated, about 5-7 minutes.
Assemble tacos:
Warm the corn tortillas. Place a generous amount of the cooked mushroom mixture on each tortilla. Top with your favorite toppings, such as avocado, cilantro, lime wedges, and salsa. Serve immediately.
Recipe Note
- If you can't find wild lobster mushrooms, you can substitute them with oyster mushrooms or shiitake mushrooms.
- For a spicier taco, add a pinch of cayenne pepper to the seasoning mix.
- Serve with a side of Mexican rice or black beans for a complete meal.
