Wild Lobster Mushroom and Cheese Sandwich

Ingredients

  • Wild lobster mushrooms, cleaned and sliced - 1lb
  • Butter - 2 tablespoons
  • Garlic - 1 clove
  • Mayonnaise - 2 tablespoons
  • Arugula or other leafy greens - ¼ cup
  • Sliced Cheese (optional) - ¼ cup
  • Grated Parmesan Cheese - ¼ cup
  • Salt and pepper to taste

Directions

  1. Wash the lobster mushrooms under cold water and remove any dirt or debris. Slice them into desired thickness. (15 minutes)
  2. In a large skillet over medium heat, melt the butter. Add the sliced lobster mushrooms and cook, stirring occasionally, until the mushrooms are tender and browned. This may take 25-30 minutes. Stir in the minced garlic and cook for an additional 30 seconds, or until fragrant. Season with salt and pepper to taste. (25-30 minutes)
  3. Spread mayonnaise on both sides of each bread slice. Place a layer of sautéed mushrooms on one slice of bread. Top with arugula, cheese (if using), and salt and pepper to taste. Sprinkle grated Parmesan cheese on top. (5 minutes)
  4. Place the other slice of bread on top and cut the sandwich in half diagonally. Serve immediately. (2 minutes)
