Ingredients
- Wild lobster mushrooms, cleaned and sliced - 1lb
- Butter - 2 tablespoons
- Garlic - 1 clove
- Mayonnaise - 2 tablespoons
- Arugula or other leafy greens - ¼ cup
- Sliced Cheese (optional) - ¼ cup
- Grated Parmesan Cheese - ¼ cup
- Salt and pepper to taste
Directions
- Wash the lobster mushrooms under cold water and remove any dirt or debris. Slice them into desired thickness. (15 minutes)
- In a large skillet over medium heat, melt the butter. Add the sliced lobster mushrooms and cook, stirring occasionally, until the mushrooms are tender and browned. This may take 25-30 minutes. Stir in the minced garlic and cook for an additional 30 seconds, or until fragrant. Season with salt and pepper to taste. (25-30 minutes)
- Spread mayonnaise on both sides of each bread slice. Place a layer of sautéed mushrooms on one slice of bread. Top with arugula, cheese (if using), and salt and pepper to taste. Sprinkle grated Parmesan cheese on top. (5 minutes)
- Place the other slice of bread on top and cut the sandwich in half diagonally. Serve immediately. (2 minutes)
