Ingredients

  • 1 pound wild lobster mushrooms, cleaned and sliced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup vegetable broth
  • 8 corn tortillas
  • Toppings: avocado, cilantro, lime wedges, salsa

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook until browned and slightly crispy, about 5-7 minutes.  
  2. Add the onion and garlic to the skillet and cook until softened, about 3-5 minutes.
  3. Stir in the chili powder, cumin, salt, and pepper. Pour in the vegetable broth and bring to a simmer.
  4. Reduce heat to low and let the mixture simmer until the broth has evaporated, about 5-7 minutes.
  5. Warm the corn tortillas. Place a generous amount of the cooked mushroom mixture on each tortilla. Top with your favorite toppings, such as avocado, cilantro, lime wedges, and salsa. Serve immediately.
